For this fourth menu, Chef Aurélien Lasjuilliarias offers us a culinary journey between tradition and modernity. While waiting for warmer days, he came up with the idea of telling you a cheerful story, and perhaps taking you away, for an evening, to warmer and more poetic lands. Between tradition and modernity, this season's cuisine honors the two passions that rock his daily life: his love for French local products and his passion for travel. Mixing classic dishes with more daring innovations, each plate to be shared tells a story: the tale of an encounter, an exotic dish tasted at the corner of a street stall, an experience spent in other stoves of Parisian high places, or a day in his native house helping his mother prepare the Sunday feast. We find his beloved local products, such as French quail or pâté en croûte, combined with the flavors of the world explored during his various travels: sweet potatoes, exotic fruits or miso.
