Fusion cuisine, a blend of cultural identities. 

The concept of fusion cuisine is to highlight different cultural identities by mixing them in the same meal. It’s an approach that takes inspiration from various culinary techniques and recipes to sublimate the products and create unexpected flavors. Chef Santiago uses this approach daily to cook and develop unique and delicious dishes.

A fusion cuisine with multiple inspirations... 

Chef Santiago Guerrero's inspirations are multiple. The cuisine of renowned chefs such as Marx, Anton and Redzepi, among others, have always motivated and guided him in his approach towards cooking. However, among all these chefs, it is Anthony Bourdain who has been the biggest source of inspiration. As chef and writer, Bourdain dedicated his life to exploring and understanding different cultural identities through local cuisines, while highlighting those cultures and the people who carry them.

Chef Santiago's signature dish 

One of the dishes on Hey Honey's menu that particularly highlights fusion cuisine is the duck stone. A dish as surprising as it is flavorful, this signature recipe is one of the chef's pride: "I wanted to marry Colombian and French techniques and products, while re-interpreting a very simple Latin American street food dish: the empanada. So we designed a trompe l'oeil (optical illusion), which looks like a rock laying on a bed of herbs, but it’s actually a blue corn empanada stuffed with shredded southwestern duck and candied lemon, all on a bed of chickweed."
